Are your managers conducting Check Audits?

With all the restaurant technology and handheld Point of Sale devices, the practice of check audits has never been easier.  However, it has also become a lost art.  Check audits are an important arrow in a restaurant manager’s quiver and can pay big financial dividends.

Let’s look at the singular example of Non-Alcoholic Beverages like soda, coffee and Iced Tea, which are ordered by over half of all guests.

Let’s say a restaurant serves 100 guests for each lunch shift.  That’s 50 soft drinks or teas.

If servers forget even 1 out of 10 sodas or teas, or 1 out of 10 servers leave them off checks for any number of reasons, that’s 5 soft beverages per lunch that guests aren’t paying for.

At an average price of $3 per drink, that’s $15 in unrealized revenue for each day.

Again, in this scenario we’re just talking Lunch.  In my experience, after-dinner coffee is forgotten as much or more than the soda at lunch.

$15/day amounts to $450 per month just by doing check audits! What could you do with $450 per month?  Lease a new piece of equipment?  Give your grill cook a $2.50/hr. raise?  Sign a new cleaning crew, level your tables?

Earning that $450 per month is simple, if not “easy.”

Audit checks throughout every shift.  Use the POS terminal to look at open checks.  Compare servers’ hard checks with the receipts they’re giving guests.

Check throughout the shift, check at the end of each shift when you’re cashing each server out.
